About this class

Join our one day Japanese cookery class based on Atsuko’s second cookbook ‘Atsuko’s Japanese Kitchen’. With over 15 years of teaching experience, Atsuko takes you on a journey to the truth of Japanese cuisine.

This class is all about celebrating Japanese everyday cooking. You will learn how to prepare the very best home-cooked comfort food recipes from Atsuko’s cookbook. Atsuko will teach you the simple secrets of Japanese cuisine based on the magic “rule of 5”, how to plan and eat a meal the Japanese way and the essential ingredients and tools you will need to get started. Atsuko will give you plenty of cooking tips throughout the class to help you understand the concept behind Japanese food.

Expect an intensive day as most of popular Japanese dishes will be covered in this class. After the class, you will gain the confidence to cook a full Japanese meal to impress your friends and family!

What you'll learn

  • Dashi: Japanese dashi stock from kombu and katsuobushi bonito flakes 

  • Sticky rice: Made with premium “koshihikari” rice from Japan

  • Onigiri: Rice ball with condiments

  • Dashimaki tamago: Juicy egg roll with daikon tsuyu sauce

  • Niku jaga: Traditional Japanese beef and potato stew with shirataki noodles

  • Classic miso soup

  • Wakame & cucumber salad: With creamy sesame dressing

  • Tori no lime teriyaki: Chicken teriyaki with lime with yuzu kosho

  • Chan chan yaki: Salmon fried in miso garlic sauce

  • Goma ae: Green beans with /white sesame seeds sauce

  • Dressings & Sauces Ume dressing/Japanitalian dressing/tsuyu sauce

    • Fine quality ingredients (e.g. sashimi grade quality from Moxon's fishmongers)

    • Online recipe booklet

    • Sit down meal at the end of the class (or take away option)

    • Atsuko’s Kitchen Apron to wear in the class (feel free to bring your own)

    • Refreshments throughout the class (organic Japanese tea from Clearspring, sake, etc..)

    • All kitchen tools and equipment

    • Small Groups: Maximum 8-10 guests for personalized attention

    • Collaborative Learning: Some elements may involve working in pairs—don’t worry if you’ve come alone – it’s a great way to meet new people and have a laugh

    • Beginner-Friendly: No prior cooking experience required

    • Dress Code: Comfortable clothes and closed-toed shoes recommended - Aprons will be provided for the cooking classes. You can also bring your own apron if you wish.

    • Age Requirements: Minimum age 14 (under-14s must be supervised by a guardian with full-price ticket)

    Parking near Columbia Road is free on weekends, though Sunday gets very busy due to the Flower Market; on weekdays, there’s one free hour, then charges apply.
