Where to Buy Fish for Sushi and Sashimi
One of the questions I am often asked is: “Where can I buy good fish for sushi and sashimi?”
The answer is not simply about finding the most expensive fish. For me, freshness, handling, sourcing and the way the fish has been prepared are much more important.
When buying fish to eat raw, I look for a fishmonger who understands Japanese preparation and knows how to handle fish properly. I also like to ask what is particularly good that day rather than deciding only from a display.
In London, there are several places I would recommend exploring, including Japanese fishmongers such as Atariya and Natural Natural, as well as specialist fishmongers and markets. Atariya, for example, has dedicated fish counters offering fish prepared for sushi and sashimi.
For beginners, I would always suggest telling the fishmonger exactly what you intend to make. If you are preparing sashimi at home, say so. If you are making nigiri, explain that too. The way a fish is cut and prepared can make a considerable difference.
And remember "fresh” does not automatically mean “suitable for eating raw.” Always ask the fishmonger whether a particular fish is intended and prepared for raw consumption, and follow their advice on storage and handling.
For me, buying fish for sushi is part of the enjoyment. Look, ask questions, learn about the fish, and get to know your fishmonger. Once you find someone you trust, you may discover that they become just as important to your cooking as your favourite Japanese ingredients.
