Join our signature 5 weeks Japanese cookery course online! The recipes are based on Atsuko’s cookbook ‘Atsuko’s Japanese Kitchen’. With over 12 years of teaching experience, Atsuko takes you on a journey to the truth of Japanese cuisine.

This class is all about celebrating Japanese everyday cooking. You will learn how to prepare the very best home-cooked comfort food recipes from Atsuko’s cookbooks. You will also be introduced to the simple secrets of Japanese cuisine based on the magic “rule of 5”, how to plan and eat a meal the Japanese way and the essential ingredients and tools you will need to get started. Atsuko will give you plenty of cooking tips throughout the course to help you understand the concept behind Japanese food.

Most of the popular Japanese dishes will be covered in this course, however you will gain the confidence needed to cook a full Japanese meal to impress your friends and family!

Course Schedule:

Class 1 on Wed 4th Nov: Introduction to the Japanese cuisine and essential ingredients

Sticky Rice, Dashi, Miso Soup with wakame and silken tofu, Oyako donburi (chicken and egg bowl), Onigiri (rice ball) 

Class 2 on Wed 11th Nov: How to season a dish with Japanese seasonings 

Nikujaga (traditional Japanese beef and potato stew with shirataki noodles), goma dressing for wakame & cucumber salad, Ginger rice, White miso soup. 

Class 3 on Wed 18th Nov: How to use miso for a meal 

Salmon chan-chan yaki (salmon with miso garlic), miso orange marinated fish, Akadashi soup, miso dengaku with aubergine.

Class 4 on Wed 25th Nov: Homemade “ready to use” sauce and dressing

Chicken Teriyaki (or salmon,  tofu for vegetarian),  Ponzu dressing for salad, edamame rice,  goma dressing for wakame & cucumber salad, 

Class 5 on Wed 2nd Dec: Sushi Party!

Chirashi sushi (sushi rice topped with salmon, prawn, and variety of toppings), Soba Noodles with Homemade Tsuyu Dipping sauce. 

The menu in each class is based on 4 portions so it will be enough to feed your family, friends and/or partner after the session or keep some leftovers for next day lunch! 

*There will be alternatives for vegans or vegetarians. Please ask us for more details.

After you have booked

You will receive an email detailing all the necessary ingredients and equipment (i.e. chopsticks, saucepan, etc..), as well as recipes and a preparation note prior to the class. You will be provided with links where you can easily shop for everything online if you wish to do so and a grocery guide. If you wish to purchase the ingredients with us please note give us 5 working days to post the goods. We advise to book your online class one week in advance to allow yourself enough time to buy all the ingredients and have them delivered to your door.

Prior to your online class

Please prepare your ingredients as per preparation note sent to you just after you booked your class with us. This will take approximately 30 minutes.

During your online class

The class will start with an introduction to the recipes that you cook, followed by the cooking session and then a home cooked delicious Japanese balanced meal to enjoy! 

Atsuko’s cookbook Atsuko’s Japanese Kitchen is available to purchase online if you wish. Although it is not required to attend the class, it contains truly valuable information which would certainly make you even more eager to attend this session!
