A special one-off hands on cooking class with Mari Fujii, you will be provided a comprehensive introduction to the art of Shojin Ryori and to learn how to combine local ingredients to inspiring dishes.
Atsuko’s Kitchen is delighted to welcome Mari Fujii the renowned Shojin Master and author coming all the way from Kamakura, Japan, for cooking classes (these are one-off classes), which will put the focus on Buddhist temple food known as Shojin Ryori. Even though vegetarian and vegan cooking has been in existence for centuries, Shojin cuisine has recently become quite fashionable due to an increasing awareness of the importance of what we eat and how we treat the earth. The food is based around five fundamental Japanese seasonings and works very much with the changing seasons and the availability of certain plants and vegetables which make up the staple ingredients of most of the recipes.
Mari Fujii has taught temple cuisine for over twenty years. She has published a number of cookbooks, including one in English the enlightened kitchen. In this event, she will share with us some of the secrets of Shojin Ryori. And she teaches the importance of drawing out the natural flavours of seasonal ingredients rather than something with heavy sauces or spices. Shojin cuisine not only offers numerous physical and spiritual benefits but also creates a unique dining experience that both invigorates and energises.
In this hands-on cooking class with Mari Fujii, you will be provided a comprehensive introduction to the art of Shojin Ryori and to learn how to combine local ingredients to create innovative and inspiring dishes. After cooking session, we sit and finally eat what we have made!
