Atsuko’s Kitchen is welcoming Japan’s famous Shojin Ryori (Japanese temple cuisine) author and chef, Mari Fujii who has taught temple cuisine for over twenty years. In this cooking class, she presents a principal of Shojin Ryori dishes, many adapted for the Western kitchen but all true to their roots. And she teaches the importance of drawing out the natural flavours of seasonal ingredients rather than something with heavy sauces or spices.
The food is based around five fundamental Japanese seasonings and works very much with the changing seasons and the availability of certain plants and vegetables which make up the staple ingredients of most of the recipes.
In this a hands-on cooking class, you will be provided a comprehensive introduction to the art of Shojin Ryori and to learn how to combine local ingredients to create innovative and inspiring dishes.

- Gammodoki age dashi served with daikon and ginger
- Daikon steak with crispy renkon and gobo chips
- Satoimo tomoae (taro potato dressed with white miso)
